About Me
Ciao, I’m Werner—digital nomad, late bloomer, and olive oil romantic
I’m part of the Baby Boomer generation—a demographic that grew up on buttered toast, rock concerts, and the promise of a longer, freer life than our parents ever imagined. And to be fair, we’ve checked a few of those boxes. Yes, we’re living longer. Yes, some of us have the financial freedom to retire with a view. But there’s a catch.
We also spent decades hunched over keyboards, microwaving dinner, and ignoring the low-grade warning lights blinking on the health dashboard.
Eventually, those lights got a little too bright to ignore.
The Fork in the Road
A few years ago, in yet another temporary apartment—one of the many that come with my digital nomad lifestyle—I found myself staring into the mirror and seeing two possible futures:
Default Mode – Stick with the habits that brought me here. Keep hoping that joint pain and prescription bottles are just part of the deal.
The Experiment – Rewire my life around food, movement, self-awareness, and rhythm. See what happens when you actually try to live longer and better.
I chose the experiment.
And that decision eventually led me to Friuli-Venezia Giulia in the northeast of Italy. A land of wild herbs, Ribolla Gialla, and Extra Virgin Olive Oil (EVOO) so green it glows. Here, nestled between alpine winds and Adriatic salt air, I’m rebuilding my habits, one walk, one plate, and one deep breath at a time.
From Personal Quest to TarCasso—now supercharged by AI
At some point along the way, I realized that aging well is not something you do alone. So I founded TarCasso—a food-tech venture with a single obsession: transforming real science into real food that actually supports a longer healthspan (without making you miserable in the process).
But I didn’t do it alone.
Enter Artificial Intelligence—my always-on, never-judgmental, slightly nerdy co-pilot. AI helps me:
Dig through research papers faster than I can finish my espresso
Connect my personal experiences (like “Why did my blood pressure drop after eating this cocoa?”) with actual science
Spot patterns in my self-tracking data I would’ve otherwise ignored
Let’s be honest: La Longevità wouldn’t exist without AI. Not like this. I like to think of this blog as AI-enhanced—powered by a mix of human quirks and algorithmic curiosity.

What You’ll Find Here
This isn’t a medical blog. It’s not a health guru channel either. This is a documented experiment—run by one curious human and one very patient AI.
Field Notes from Concius Aging
BConscious nutrition, blood pressure, blood sugar, etc. I will observe myself and share my experiences. Even, or especially, those that didn’t work for me.
Kitchen Wins & Disasters
From olive oil tasting flights to sourdough bricks, you’ll see what works—and what definitely doesn’t.
Life in Translation
What it’s like learning Italian in your 60s, trying to shop without Google Translate, and being out-cooked by an 80-year-old nonna.
Meditation, Gardening, and Purpose
Longevity isn’t just about your gut microbiome. It’s also about finding peace of mind—and I’m working on that too. Slowly.
Why Italy?
Because here, meals are events. Food is sacred. And nobody rushes through lunch.
I didn’t want to just read about the Mediterranean lifestyle. I wanted to live it. So I moved here, enrolled in Italian classes, and now rent an apartment surrounded by olive trees older than me.
My grammar tutors are 9-year-olds at the gelateria. My cooking coaches are grandmothers with zero tolerance for shortcuts. And somewhere along the way, I fell in love with extra virgin olive oil—not the supermarket stuff, but the green, bitter, spicy nectar pressed just down the road.
EVOO became my muse, my health hack, and—let’s be honest—my identity.
So Who Am I, Really?
I’m Werner—a slightly eccentric, endlessly curious, sometimes sarcastic traveler of the digital and physical world. I believe in science, but I also believe in stories. I track my health, but I still eat pasta. I meditate (badly), I garden (occasionally), and I talk to AI (a lot).
And I’m inviting you to join me on this longevity journey—not because I have the answers, but because I’m committed to asking better questions.
An invitation
Whether you’re another boomer eyeing a healthier retirement, a millennial curious about aging on your own terms, or simply someone who loves olive oil as much as I do, I’d love your company. Challenge my ideas, steal my recipes, or just lurk and laugh at my mistakes. Either way, you’re welcome at my table.
Benvenuti nella mia avventura—and here’s to aging with sapere (knowledge) and sapori (flavor).

I love extra virgin olive oil, dark chocolate, and Criollo cocoa. That's my daily ration of “polyphenol food” for my longevity journey.
